What is your favorite recipe of the season?
My favorite is my herb roasted chicken.
- one whole clean roasting chicken cleaned and ready for roasting
- chopped garlic
- 2 TBS olive oil
- 2 TB fetta cheese
- 1 TB Basil
- 1 TB Oregano
- 1 TSP salt to taste
- red pepper to taste
pre-heat oven to 350degrees
put all the ingredients except the chicken in a mini chopper and chop
rub additional salt all over prepared bird
cut slits in the chicken
fill the slits with the paste
rub any remaining paste all over the bird and in between the skin and meat
put chicken in tray and cover with foil
cook at 350 (30 minutes per pound)
for the last 45 minutes of baking remove the foil and continue baking
let the roast rest for 15 minutes before cutting and serving
